The Irish Dexter cattle are a breed of cattle originating in Ireland. They are about half the size of a traditional Hereford. Dexter cattle are a small breed with mature cows weighing between 600 and 700 pounds and mature bulls weighing 1000 pounds. Beef animals mature in 18 - 24 months and result in small cuts of high-quality, lean meat, graded US Choice, with little waste. The beef produced by Dexter's is well marbled and tends to be dark.
Beef from a grass-fed steer has about 1/2 to 1/3 as much fat compared to any cut from a grain fed animal, lower in calories, grass-fed beef is also higher in Vitamin E and omega 3 fatty acids. These omega fatty acids, along with vitamin E, are thought to help reduce the risk of cancer, lower the likelihood of high blood pressure, and potentially make people less susceptible to depression. Grass-fed beef is rich in another beneficial fat called conjugated linoleic acid (CLA) , which potentially lowers the risk of cancer.
Most families do not want the expense of a traditional sized beef nor do they have the room in their freezer for 1000 pounds of beef. Buying beef produced by Dexter cattle will give you all of the possible cuts done your way taking up less freezer space. A whole steer can weigh 250 - 400 pounds dressed. $5.00 per pound cut and wrapped per your specific directions.
